Because smokers are capable of producing a strong smoke flavor even in a low temperature environment, grills cannot match their capabilities. These are top choices, depending on which type of smoker you want, according to experts who we interviewed.

Smokey Mountain Cooker Smoker 14-Inch

The Weber Smokey line is the top pick for Max Hardy , owner and head chef of Coop Detroit because it meets all of the needs for both the professional and amateur smoker. It is also the smallest, at 14 inches. This makes it perfect for barbecuing even in your own backyard. A cover is included, along with steel cooking grates in plated, and metal legs that resist rust. There’s also a lid thermometer. For an additional $110 you can purchase the larger 18-inch smoker. The 22-inch smoker will add $210.

But the Large can cook 12 burgers or six chickens vertically.

Styles from the Top Smokers

You have the option of a variety of heat sources, Mumford said:

Offset. This offset allows for better control over smoke injection. “These are practical-but-pricey,” he warned.

Direct. Direct. “This way is harder to control the smoke but it’s best for personal use due to the price,” he said.

Drum. This is a smoker usually made of metal that looks like a barrel or drum on its side. Fox explained, “The heat source is at the bottom of the barrel. It can be charcoal or wood fire. Your item will hang from bars along the top.”

Vertical water smokers Fox called them “R2D2 cooks” and said they were popular for people starting out. These upright cylinders may be available in charcoal or electric. The water chamber adds moisture, which can make the food taste more steamed.

Vertical. The upright-shaped cylinders of these smokers can be used for smaller home smoking.

Ceramic. Fox said that a ceramic charcoal smoker can also double as an oven and grill. The ceramic material is more heat-resistant than metal.

Masterbuilt Gravity Series 560 is the Best Pellet and Best Gravity-Fed Smoker.

Since they’re both for the same kind of person, I am lumping gravity-fed and pellet smokers together. Randolph admits that offsets are his favorite. Randolph says, “But last night, I was up till 11 o’clock feeding wood into an offset…you cannot walk away from that machine.” Gravity-fed and wood pellet grills both make it easy to avoid doing that. These grills offer all the advantages of a traditional gas grill with the charm of a charcoal smoker. Randolph supports machines like these, and even wrote a cookbook just for pellet grills.

In the actual testing, things got close between the Masterbuilt and the Z Grills 450B pellet smoker . The Masterbuilt, however, held its temperature more consistently than the Z Grills 450B pellet smoker. It also produced the best wings of any smoker I tried.

Assembly is a little intimidating, as I had to actually connect the wires for the digital controls, the thermostat, and the fan, but the electronics were all intuitive and worked as advertised. It has slots for built-in temperature probes which is an excellent feature. You can also control your smoker using an app via bluetooth or WiFi. This is definitely a great feature. Personal experience with apps for grills and smokers is that they are slow to respond, making it difficult to use. You can still control everything from your phone with this interface if that’s what you want.

Finally, it is perfect if you want a smoker grill combo. The only change in setup to go from smoker to grill is to flip the heavy-duty cast iron grates from the “smoke” side (which is beveled) to the “sear” side (which is flat). You can turn the temperature control to any setting you like. Though I don’t know how much the thermostat will regulate temperature, it can go up to 700 degrees.

Other Smokers I Tested

Let me be very clear. I did not pick the best, but all of my smokers performed admirably and would highly recommend them.

Oklahoma Joe’s Highland Reverse Flow Offset Smoker was slightly smaller and lighter than that of the Char-Griller. It didn’t retain heat quite as well the Char-Griller and took longer to get back up to temperature than either the Char-Griller or the Weber, though only by a few minutes not much if you’re doing a 10-hour cook. It can also be set up for direct heat grilling like the Char-Griller. However, the firebox is smaller so that there’s less cooking space. You have two choices for your smokestack configuration which allow you to customize it and make experiments.

Z Grills 450B Pellet Grill does everything you want from a pellet grill. It is easy to set up, use and requires minimal supervision. There has been some online musing that Z Grills could be a Traeger killer (Traeger being the biggest name in pellet grills) by offering solid equipment at much lower cost. It was exactly what I expected. It did not hold heat as well as my Masterbuilt. The digital display also seemed slightly inaccurate compared with my thermometer. Although I do not want to criticize that as all grills are subject to hot and cold spots, it was still very good. It doesn’t have the Wi-Fi connectivity of the Masterbuilt, but, as I said, that connectivity can be more burden than luxury at times. It can heat up to 700°, but it isn’t claimed that it can. However it is great for grilling and smoking. The best choice for a low-cost pellet grill is this one.

Charbroil Digital Electric Smoker wasn’t the best machine for me. The interface on the vertical smoker was tough to use and the app was predictably buggy. The temperature fluctuated more than the others and the smoke I got from my wood chips was not as good (as Randolph pointed out, these problems aren’t unique to the Charboil; it’s likely to be an issue for many electric smokers).

How to Pick the Right Smoker

A smoker can be described as a style of barbecue that allows for slow, low-temperature cooking of meats and seafoods. Smokers use pellets or wood chips to add smoke flavour. Particularly good at cooking tough cuts like ribs, brisket and other meats over four to sevenhours at temperatures as low (107°C) as 225°F. When done, the meat should literally fall off the bone or tear apart like a piece of pulled pork. Slow cooking is a great way to cook more delicate meats. By the small ring of pink flesh just underneath the crusty ‘bark, you can tell if your meat was smoked.

Smokers can be fuelled in a number of ways: charcoal (or briquettes), gas, electric and wood pellets. Charcoal is most widely used and also makes smokers the cheapest. However, novices will almost certainly find it very difficult to balance the amount of charcoal required with the amount of air circulation through the vents. Too much ventilation can cause the interior temperature to rise too quickly, and charcoal will begin to burn more quickly. If there is not enough ventilation, the temperature might be too low.

Kamado charcoal grills are best for smoking because they have thick insulation that keeps the heat in. Although you could smoke food using a regular barbecue grilling on coals and grilling grates, it is unlikely that the BBQ was designed to do so.

Long smoking sessions are easier with electric and gas smokers. The fuels used – electricity or propane gas – can last for years. Just be sure when using gas that you have enough propane in the bottle to last several hours. Most electric and gas smokers come with a small wood chip box near the heat source which heats up the wood, creating smoke. There are many types of wood chips available, including maple, oak and cherry. Each type imparts a unique flavour to food.

If your budget allows, the best style of smoker is one that burns compressed wood pellets. The pellet grills reviewed here require electricity to run an auger that puts the pellets in a pot under the grill grate. The beauty of pellet grills is their ability to control everything via a computer processor. This means that you can set the desired temperature for your entire cook time. You can set the desired temperature and it will stay that way, just like an indoor oven. If you have the money and are new to grilling, a pellet barbecue is your best choice. You can grill standard meats, such as steaks or barbecues. Some even have the ability to sear them. Because they burn wood for their main fuel, all food cooked on a pellet barbecue is infused with a smokey flavor, regardless of whether it’s basic chicken wings or Texas-style beef brisket.

Now go forth and smoke.

While grilling is great for outdoor cooking, smoking elevates it to new heights. The smoke penetrates the meat and gives it a great taste. It doesn’t take expensive cuts of meat to make an impression. For moisture to be locked in, you need tougher cuts. Everything, from pork roasts to chicken ribs, will turn out fully cooked and tender. No matter if you’re new to smoking or an experienced smoker, the options are endless.

Type

What type of fuel and how easy or difficult it is to smoke is what makes a difference in the lives of most smokers. Charcoal, the traditional and most popular method of smoking, is first. It is Raichlen’s “preferred fuel to smoke, with added wood chunks and chips as an enhancement.” He loves the process of making charcoal. “I’m a live fire guy: I love the act of lighting, building, and attending to a fire, and though it’s not necessarily the most convenient or easiest option, I think you get the best smoke flavor with that combination of charcoal and hardwood,” he explains. The pit barrel smokers can use charcoal as well. “The food is hung from the bars on top. Charcoal goes in the bottom,” Raichlen said. While it is not as effective at smoking, they are very popular because of their low price. Another option for smokers is the pellet smoker. This uses compressed hardwood pellets with puck-like shapes for fuel. (Charcoal and sawdust can be options too). These are stored in separate, lower compartments. This smoke is circulated throughout the smoker’s interior, and it cooks food from above. Karmel loves using pellet grills to smoke. “An electric fan controls temperature so you can get a very consistent temperature throughout your crop. This is very important.” Raichlen however believes that they provide “great convenience” and a more complex smoke flavor than charcoal.

For the smoker, electric smokers have metal heating elements that are paired with wood puffs. “The real advantage is convenience, since you can set the temperature and time” instead of doting constantly on its progress, Raichlen explains. Raichlen does find that the electric model smokes differently to wood or charcoal.

A stick burner smoker is another option if you have some experience in grilling. These smokers are more expensive and take more attention. The name also refers to how the fuel is used. In this instance, the “sticks” are logs and not charcoal and wood chips. A offset barrel smoker typically uses steel oil pipes and has a 16- to 20-inch barrel. Raichlen says that some have metal boxes but others use metal piping. “All of them work the way they should: There’s the firebox one side, the cook chamber the center and the chimney the opposite side. This draws the air out.” These barbecues are worth the extra cost of maintenance and their greater quality.
